A Japanese type of knife, designed primarily for herbs and vegetables. A characteristic feature of this model is its lowered tip which significantly facilitates shredding, and a wide blade onto which processed foodstuffs can be swept and carried to your bowl of salad. The blade: quality precious ceramics, close in hardness to diamond, produced on the basis of zirconium carbide (ZrC). With its ceramic blade, all foodstuffs (particularly vegetables and fruit) remain full of vitamins and retain their ‘original' flavor even after contact with knife.
