Ceramic materials constitute a healthy alternative, which - unlike metals - does not react with vegetable or fruit juices. As we know, lettuce should rather be torn then cut because it darkens upon contact with metal; cucumbers should be peeled in appropriate directions to eliminate their slightly bitter taste, etc. With a ceramic knife, you may just as well cut your lettuce, peel and chop your cucumbers from all sides, and process all other vegetables and fruit, not worrying about their taste or nutritive value.
